Veal Chops with Mushrooms

6 veal loin or rib chops

1/3 cup butter or margarine

¾ cup fresh mushrooms

2 tablespoons lemon juice

½ cup sliced onion

½ clove, crushed garlic

¼ cup flour

1 teaspoon salt

¼ teaspoon pepper

1 ¼ cups condensed beef broth

2/3 cup dry white wine

1 teaspoon chopped tarragon

1 teaspoon liquid gravy seasoning

½ teaspoon snipped chives

Wipe chops with damp paper towels. With hot butter in a deep skillet, brown chops on both sides. Remove chops; put in casserole. Sprinkle mushrooms with lemon juice. Add mushrooms with onions and garlic to drippings in the pan. Sauté until golden - about 5 minutes. Remove with slotted spoon and set aside with chops. Stir flour, salt & pepper into pan drippings until well blended. Gradually stir in bouillon and wine. Add tarragon, gravy seasoning, chives and pepper. Bring to boiling, stirring; pour over chops &

vegetables in casserole. Cover & bake 30 to 40 minutes at 350F.
